Here's a bunch of my favourite recipe's for your cooking pleasure!


Beat It, Bake It, Chocolate Cake It!

This is a family favourite that was passed from my Nana to my Mum and then on to me and my sisters. And the best part is it's the easiets, richest chocolate cake you'll ever make.



Ingredients:

1 2/3 Cups of Plain Flour
1 1/4 Cups of Sugar
2/3 of a Cup of Cocoa
1 1/2 Tsp Bi-carb Soda
3/4 Tsp Salt
1 1/2 Cups of Buttermilk
125g Soft Unsalted Cooking Margarine (at room temperature)
2 Eggs
1 1/2 Tsp Vanilla Essence

In a large mixing bowl stir together flour, sugar, cocoa, bi-carb soda and salt. Add buttermilk, margarine (cut into small peices), eggs and vanilla.

Beat at low speed for 30 seconds, scrape down the sides of the bowel, hen beat on high for three minutes more.

Divide batter into two 20cm greased & floured cake tins. Do not tap the air out of the batter.

Bake in the oven at 180'C for 25 to 30 mins or until the center of the cake springs up when you lightly touch it.

I like to fill with berries and cream and ice the cake with buttercream frosting. I've also iced with salted caramel frosting and it was delicious.
